Ingredients
- Barramundi fillets
- Olive oil
- Lemon or lime juice
- Lemon zest (optional)

Instructions
Step 1: Prepare the Marinade
In a bowl, mix olive oil, lemon juice, lemon zest, chopped herbs, salt, pepper, and paprika or chili flakes.
Step 2: Marinate the Fish
Coat the barramundi fillets evenly with the marinade. Let them rest for 15–20 minutes for better flavor absorption.
Step 3: Grill the Fillets
Preheat a grill pan or outdoor grill to medium-high heat.
Place the fillets on the grill and cook for 3–4 minutes per side, depending on thickness, until the fish is opaque and flakes easily.
Step 4: Optional Vegetables
Grill or sauté vegetables alongside the fish with a little olive oil, salt, and pepper.
Step 5: Serve
Transfer the grilled barramundi to a plate. Drizzle with a little fresh lemon juice and garnish with extra herbs.
Notes
- This recipe focuses on freshness and natural fish flavor.
- Avoid over-marinating, as citrus can start to “cook” the fish.
- You can also bake at 200°C for 12–15 minutes if grilling isn’t available.
