Ingredients
- Fresh clams (cleaned and scrubbed)
- Olive oil
- Butter
- Garlic (minced)
- Onion (finely chopped, optional)
- Dry white wine (or water/stock as substitute)
- Lime or lemon juice
- Chili flakes (optional)
- Fresh parsley or cilantro (chopped)
- Salt and black pepper (to taste)
Instructions
Step 1: Clean the Clams
Rinse the clams thoroughly under cold water. Discard any that are open and do not close when tapped.
Step 2: Sauté Aromatics
Heat olive oil and butter in a large pan over medium heat. Add garlic (and onion if using), sauté until soft and fragrant.
Step 3: Cook the Clams
Add the clams to the pan and pour in white wine (or stock). Cover with a lid and cook for 5–7 minutes, shaking the pan occasionally, until the clams open.
Step 4: Season
Add chili flakes, salt, and black pepper. Stir gently to coat the clams in the sauce.
Step 5: Finish
Add fresh lime or lemon juice and chopped parsley/cilantro. Cook for another 1 minute to combine flavors.
Step 6: Serve
Transfer to a serving bowl and pour the garlic butter sauce over the clams. Serve hot with crusty bread or rice.
Notes
- Discard any clams that remain closed after cooking.
- Avoid overcooking, as clams become tough.
- You can enhance the flavor by adding a touch of cream for a richer sauce.
